Bei Sarcletti geht es nicht um möglichst ausgefallene Namen oder kurzlebige Trends. Unser Eis entsteht aus Erfahrung, ausgewählten Zutaten und dem Anspruch, dass jede Sorte für sich stehen muss. Unser Ziel ist es, dass Du nach dem ersten Löffel weißt, warum Du hier bist.

Hergestellt im eigenen Haus.

Seit fast 150 Jahren bewahren wir bei Sarcletti die Kunst der Eisherstellung. Gleichzeitig entwickeln wir unser Eis ständig weiter. Wir probieren neue Sorten aus, feilen an bestehenden Rezepturen und achten darauf, dass jede Sorte so schmeckt, wie sie schmecken soll.

Dafür braucht es Erfahrung, Zeit und gute Zutaten. Frische Milch, ausgewählte Früchte, gute Schokolade, Nüsse und alles, was eine Sorte wirklich ausmacht. Nicht künstlich überladen, sondern sauber im Geschmack und mit dem Anspruch gemacht, den man bei Sarcletti erwartet.

Ausgewählte Zutaten

Bei vielen Sorten entscheiden die Zutaten fast alles. Pistazien aus Sizilien, dunkle Schokolade mit Tiefe, reife Mangos, frische Beeren oder Haselnüsse mit vollem Aroma. Was in unser Eis kommt, soll man später auch schmecken.
‍
Deshalb wählen wir unsere Zutaten nicht nach Namen auf dem Papier aus, sondern danach, was sie in der Sorte leisten. Zum Beispiel eine Mango muss Frische bringen, Schokolade darf nicht flach schmecken und Pistazie braucht diesen nussigen, leicht herben Charakter, der eine gute Pistazienkugel ausmacht.

Jeden Morgen frisch gemacht

Unsere Eisproduktion beginnt bereits um fünf Uhr morgens. Während München langsam wach wird, laufen bei uns die ersten Maschinen, Mischungen werden vorbereitet und die Sorten für den Tag produziert.
‍
So kommt das Eis frisch in die Theke und bleibt cremig im Geschmack. Gerade an warmen Tagen merkt man, wie wichtig dieser Rhythmus ist: produzieren, auffüllen, nachlegen, weiterarbeiten. Bis auch der letzte Ansturm des Tages versorgt ist.

Rezepturen mit Feingefühl

Eine gute Sorte entsteht selten beim ersten Versuch. Manchmal braucht es mehr Frucht, manchmal weniger Süße, eine andere Schokolade, eine feinere Textur oder einfach ein paar Durchläufe mehr.
‍
Bei Sarcletti wird deshalb nicht nur produziert, sondern auch probiert, verglichen und angepasst. Manche Sorten bleiben über Jahre fast unverändert, andere werden weiterentwickelt, bis sie wieder dort sind, wo sie sein sollen: auf dem Löffel stimmig, nicht nur in der Idee.
